I thought becoming a vegetarian was going to be a huge challenge especially since I don't like to cook but so far it hasn't been so hard! Here is the recipe for last nights dinner:

~ wheat tortitias or burritos
~ left over tomato sauce with mixed vegetables or whatever veggies you want in it (heated up).
~ cheese (any kind you want)
~ egg starters
~ tomatoes, black olives, baby spinach, avocado, and anything else you would like.

~Lay out the shell, add eggs, sauce, and rest of  ingredients. Top with a sprinkle of cheese, heat in micro wave long enough to melt cheese and presto! You have one really tasty dish!

Should have taken a picture but I was too hungry! Sorry!
